Sweet and Sour Pork

I’m not sure where I got this recipe from. It is important to note that the resulting dish is not going to look like the Sweet and Sour Pork you may expect from a Chinese takeout place. There is no crispy batter to speak of; this is pork cooked directly in a sauce.

That being said, it is very good.

Note: If you make this recipe with Gluten Free soy sauce, the entire dish is GF.

Ingredients

  • Cooked rice (however much you want)
  • 1 TB Olive Oil
  • 1 LB Pork Tenderloin, cubed
  • 1 medium onion, quartered
  • 1 clove garlic, minced
  • 8 oz pineapple chunks
  • ¼ Cup Pineapple Juice (reserved)
  • ¼ Cup Soy Sauce
  • ¼ Cup Apple Cider Vinegar
  • ½ tsp. dried ground ginger root
  • medium onion
  • 2 TB cornstarch
  • 3 TB brown sugar, packed
  • (Optional) 1 medium green Pepper

Directions

  • In a measuring cup, combine the pineapple juice, soy sauce, vinegar, ginger root, cornstarch and brown sugar. Stir until cornstarch is dissolved.
  • In a large skillet, heat olive oil over medium high heat. Add the pork, onion, pepper and garlic. Cook for 8-10 minutes or until meat is browned and onion are translucent. Cover and reduce heat to medium low.
  • Pour liquid into the skillet, stir for about 5 minutes or until the sauce is thickened.
  • Add pineapple chunks. Turn off heat, cover, and let sit for 5 minutes. Serve over rice.
