Slow Cooker Sweet 'n Sour Chicken
From a slow cooker cookbook whose name I can’t remember. It’s different in taste and color than this Sweet ‘n Sour Pork recipe, though the ingredients are quite similar.
This recipe works best in a 5 quart slow cooker.

1 lb. baby carrots1 medium-sized onion, cut into wedges6 boneless, skinless chicken breast halves20-oz. can unsweetened pineapple chunks1⁄3 cup brown sugar1 Tbsp. low-sodium soy sauce2 tsp. chicken bouillon granules1⁄2 tsp. salt1⁄2 tsp. ground ginger1⁄4 tsp. garlic powder3 Tbsp. cornstarch1⁄4 cup water3 cups cooked long grain enriched rice

Layer carrots and onion in slow cooker.Drain pineapple, reserving juice. Place pineapple chunks over chicken.Mix together pineapple juice, brown sugar, soy sauce, chicken bouillon, salt, ginger, and garlic. Pour over top.Cook on low 6-7 hours.Combine cornstarch and water. Gradually stir into slow cooker.Cook 30 minutes longer or until sauce is thickened.Server over rice.
