Mandarin Orange Chicken
From a slow cooker cookbook whose name I can’t remember.
This recipe works best in a 3 or 4 quart slow cooker.

4 boneless, skinless chicken breast halves1 medium-sized onion, thinly sliced1⁄4 cup orange juice concentrate1 tsp. poultry seasoning1⁄2 tsp. salt11-oz. can mandarin oranges, drained, with 3 Tbsp. juice reserved2 Tbsp. flour(Optional) cooked rice or pasta

Place chicken in slow cooker.Combine onion, orange juice concentrate, poultry seasoning, and salt. Pour over chicken.Cover. Cook on low 4-5 hours.Remove chicken and keep warm. Reserve cooking juices.In a saucepan, combine 3 Tbsp. reserved mandarin orange juice and flour. Stir until smooth.Stir in chicken cooking juices. Bring to a boil. Stir and cook for 2 minutes to thicken.Stir in mandarin oranges. Pour over chicken.Serve with rice or pasta
