Mandarin Orange Chicken

From a slow cooker cookbook whose name I can’t remember.

This recipe works best in a 3 or 4 quart slow cooker.

Yields: 4 servings

Ingredients

  • 4 boneless, skinless chicken breast halves
  • 1 medium-sized onion, thinly sliced
  • 14 cup orange juice concentrate
  • 1 tsp. poultry seasoning
  • 12 tsp. salt
  • 11-oz. can mandarin oranges, drained, with 3 Tbsp. juice reserved
  • 2 Tbsp. flour
  • (Optional) cooked rice or pasta

Directions

  • Place chicken in slow cooker.
  • Combine onion, orange juice concentrate, poultry seasoning, and salt. Pour over chicken.
  • Cover. Cook on low 4-5 hours.
  • Remove chicken and keep warm. Reserve cooking juices.
  • In a saucepan, combine 3 Tbsp. reserved mandarin orange juice and flour. Stir until smooth.
  • Stir in chicken cooking juices. Bring to a boil. Stir and cook for 2 minutes to thicken.
  • Stir in mandarin oranges. Pour over chicken.
  • Serve with rice or pasta
