Kay's Old Fashioned Chocolate Fudge

Another recipe courtesy of Kay Murphy. This is an old recipe from an old cookbook, though this particular version has been modified by Kay herself to make it even better.

Ingredients

  • 2 cups sugar
  • 5 oz evaporated milk
  • 1/3 cup cocoa
  • 2 tablespoons corn syrup
  • 1/4 teaspoon salt
  • 2 tablespoons margarine
  • 1 teaspoon vanilla extract
  • 1/2 cup coarsely chopped nuts (optional)
  • 2 Tbsps Peanut Butter

Directions

  • Butter a 9x5x3 loaf pan.
  • Combine sugar, milk, cocoa, corn syrup and salt in a 2-quart saucepan. Cook over medium heat, stirring constantly, until chocolate is melted and sugar is dissolved.
  • Cook, stirring occasionally, until your candy thermometer reaches 234 degrees (_or until a small amount of mixture dropped into very cold water forms a soft ball which flattens when removed from water).
  • Remove from heat; add butter and peanut butter. Cool mixture to 120 degrees (F) without stirring (the bottom of the pan will be lukewarm).
  • Add vanilla, and beat rigorously and continuously for 5 to 10 minutes with a wooden spoon, until candy is thick and no longer glossy (mixture should hold its shape when dropped from spoon).
  • If you’re adding nuts, now’s the time to add them.
  • Spread mixture evenly in buttered pan. Cool until firm, and cut into squares.
