Black Beans and Rice

Classic black beans and rice. I got this recipe from the Bush’s beans website.

Yields: 6 servings

Preparation time: 5 minutes

Cooking time: 30 minutes

Ingredients

  • 2 Cups cooked rice
  • 1 Can black beans, juices drained and reserved
  • 1 Tbsp Olive Oil
  • ¾ Cup finely chopped onion
  • ½ tsp. thyme
  • 1 tsp. garlic salt
  • 3 Tbsp cider vinegar
  • ½ tsp. hot pepper sauce
  • (Optional) ½ Cup finely chopped green pepper
  • (Optional) ½ Cup diced tomatoes drained

Directions

  • In a large skillet, heat olive oil; cook onion and green pepper until crisp tender.
  • Stir in tomatoes, beans, thyme and garlic salt; cook 3 minutes.
  • Add vinegar, pepper sauce, and reserved juices. Continue to cook for 5 minutes.
  • Serve over rice.
