Bacon Rice

Yields: 1 pan of rice

Cooking time: 30 minutes
Ingredients

1 Cups rice1 Clove garlic1 Medium onion4 Slices of bacon1 Small can of diced tomatoes1 ½ Cups water

Cut up bacon into very small pieces.Cook bacon in frying pan. You want it to be at least a little crispy.While bacon cooks, finely dice onion and garlic.Add onion and raw rice to the pan and sauté with bacon.When rice is slightly brown, add garlic, tomato, and water.Bring pan to boil. Stir occasionally.Once the pan is boiling, cover with a tight fitting lid, reduce heat to low, and cook for 20 minutes.Serve and enjoy.
