Bacon Rice

I once bought a big bag of basmati rice in a burlap sack. It advertised a website full of recipes; this is but one of them.

This recipe is naturally gluten free.

Yields: 1 pan of rice

Preparation time: 15 minutes

Cooking time: 30 minutes

Ingredients

  • 1 Cups rice
  • 1 Clove garlic
  • 1 Medium onion
  • 4 Slices of bacon
  • 1 Small can of diced tomatoes
  • 1 ½ Cups water

Directions

  • Cut up bacon into very small pieces.
  • Cook bacon in frying pan. You want it to be at least a little crispy.
  • While bacon cooks, finely dice onion and garlic.
  • Add onion and raw rice to the pan and sauté with bacon.
  • When rice is slightly brown, add garlic, tomato, and water.
  • Bring pan to boil. Stir occasionally.
  • Once the pan is boiling, cover with a tight fitting lid, reduce heat to low, and cook for 20 minutes.
  • Serve and enjoy.
